Dinner: Roasted Chicken Thighs with Lemon and Oregano

I decided I have to get back to writing more here. I’ve kind of let Facebook take over because it’s so easy to use. But I would really like to build this blog more.

Since I am currently not working outside the house (and loving that!), I find myself having a lot more time to cook!

Tonight I made Roasted Chicken Thighs with Lemon and Oregano from Epicurious.

The lemon, shallot and garlic I cut up smelled soooo good and I hadn’t even cooked it yet.

added the wine (and I also added some chicken “stock” The chicken “stock” was what was left in the crock put yesterday after I’d cooked a bunch of chicken thigh-leg parts. It was much thicker than stock, it was more like jello actually, so a little went a long way!


Here’s the final product. Served with steamed broccoli and rice. The rice was just leftover takeout rice, reheated in a saucepan with a little water, a little of that “stock” stuff, and some frozen veggies. It was delicious, actually.

I poured a little more wine than I needed so I had to just drink it. You know, I didn’t want to waste it!

I really liked this recipe, I would definitely make it again. It’s actually restaurant quality!
